Freeze the batch before quality starts leaving.

Product that freezes too slowly pays you back later in drip loss, damaged texture, and lower yield. We size the blast from the product, entering temperature, packaging, tons per batch, and hours per cycle.

Then we install the room and the refrigeration and back it with a maintenance plan. Built by operators who know what happens upstream and downstream of the freezer.

The batch sets the equipment

Air cold enough to work

Air at -30 to -45°C pulls product from +5°C through the freezing curve. Cold air matters, but airflow across every product surface matters just as much. A cold room with blocked airflow still freezes slowly.

Throughput before room size

Example configurations handle 15–30 tons per batch, reach a full freeze in under 6 hours, and move up to ~60,000 m³/hr across the product. Your product and cycle decide whether those numbers fit.

Plant sized to the cycle

Bitzer screw-compressor racks sized in HP to the batch, matched with high-efficiency floor-mounted evaporators and PLC control. The plant has to recover on schedule without wasting capacity between batches.

Envelope built for blast

150–200mm PIR panels at 42 kg/m³, FM-approved, plus a reinforced insulated floor with layered XPS, SBS waterproofing, and a vapor barrier. The floor has to take the cold and the forklift traffic.

One compressor can drop

Parallel compressor design keeps capacity available if one unit drops. Redundancy costs more at the start. A loaded blast freezer with no refrigeration is a product write-off, missed production, and an emergency service call.

This is one real configuration, not a promise. Product thickness, entering temperature, packaging, loading pattern, and batch cycle all change the answer. We calculate yours from the product and the production schedule.

The blast has to fit the line.

A blast that clears product faster than the packing line can feed it leaves expensive capacity waiting. One that falls behind becomes the bottleneck and pushes product into staging.

We ran a food line for 25+ years before we built freezers for other operators. We start with how product arrives, how it's loaded, when the next batch is ready, and where frozen product goes. Then we size the room, install it, and back it with a maintenance plan.

What a blast freezer is built from

Questions we answer every week

What temperature does a blast freezer run at?

The air normally runs at -30 to -45°C and moves hard across the product. Speed matters because fast freezing forms small ice crystals. Slow freezing forms large crystals that damage cell walls, which shows up later as drip loss, weak texture, and lower yield. Colder air alone doesn't guarantee a fast cycle. Packaging, product thickness, spacing, and the loading pattern can still block airflow, so we calculate and test the complete batch.

How much product can a blast freezer freeze per batch?

Room size is only one part of the answer. Product thickness, entering temperature, packaging, loading pattern, and airflow decide how quickly the center freezes. Example rooms handle 15–30 tons per batch with a full freeze in under 6 hours, but that's not a promise for every product. Give the calculator your throughput and cycle target, then we verify the result against the actual product before any equipment is ordered.

Do I need both a blast freezer and a storage freezer?

Usually, yes. The blast freezer uses heavy refrigeration and airflow to pull warm product down fast. The walk-in freezer holds already-frozen product with far less running capacity. Using the blast for storage wastes power and ties up production equipment. Asking a storage freezer to blast product gives you a slow, uneven freeze. We size the blast to the packing line and the storage room to the inventory you need to hold.
